  Another year and another trip…this one included Minute to Win it…(which the Ethington’s won)  and some sublime flexibility by Ashley.  As always lots of swimming, eating, laughing, and of course, a Nacho Movie night.

May Visit Teaching Card

Here is my May Card….I think that everyone is struggling a little with feeling overwhelmed by money, relationships, parenting, work.  It seems to be common with everyone I talk to. 

I read an awesome talk by Pres. Monson and thought that I would use it as this months message (we got to pick our own message).

I print it out on a 4x6 @ Walmart and put it in a magnetic frame that can be put on their fridge or a mirror.

Lemon Sour Cream Bundt Cake

Anyone who knows me knows that i am in love with Bundt cakes; I have a recipe "Janie's Golden Bundt Cake" that i have perfected and make in every combination of flavor you can think of. When i saw this recipe in a book i have, "Essential Mormon Celebrations" I had to try it. And it is AWESOME! Of course i have made it my own..with my favorite...LEMON.

1 Lemon Cake mix
1 small pkg instant lemon Jello pudding mix
4 eggs
1 cup sour cream
2 tsp vanilla
3/4 cup vegetable oil

In a large bowl combine all ingredients and mix til well combined. Pour into greased Bundt pan and bake at 325* for 40 to 45 minutes.
Serve topped with the Lemon Sour cream Sauce and sliced strawberries.

Lemon Sour Cream Sauce
1 cup sour cream
1 tsp grated lemon peel
1 tsp lemon juice
1/2 cup powdered sugar
1 tsp vanilla

Mix till combined. Chill for an hour (if not that is ok) and spoon on to sliced cake. Serve with strawberries.

April VT Message

Just a quick April VT message. I bought the 4x6 magnetic frame @ walmart ($2.00) and give my ladies the new message every month. I print it out on 4x6 photo and they can keep it on their fridge or on a mirror...snag it if you want it...

It’s never easy to see a child grow up.   I don’t know which is worse: turning 40 or having your first born turn 16. It’s a toss up.  And why do I feel like 16 was just 2 or 3 years ago for me?  I remember sitting by the pool with my friends, going to dances (who doesn’t hear VH’s “Jump” or Wham’s “Last Christmas” and not smile?), being chased by Guardia Civil for toilet papering, and just being a teen…Growing up gets harder each year that goes by  and looking back get sadder because only as you get older do you truly begin to cherish what it means to be a teen.
